Burma Kadayıf – A Traditional Specialty from Diyarbakır
Burma Kadayıf is a traditional pastry from Diyarbakır, in the Kurdish region of southeastern Turkey. Prepared for generations, it is one of the city's best-known desserts and an important part of its culinary heritage.
It is made with fine strands of kadayıf pastry filled with pistachios or walnuts, then carefully rolled by hand and baked until golden and crispy. A light syrup is added after baking to bring sweetness while keeping its characteristic texture.
