Hünkar Beğendi – A Royal Dish with the Delicate Flavors of Eggplant

A signature dish of Ottoman cuisine, Hünkar Beğendi, literally “the sultan liked it,” combines tender meat with the refined taste of eggplant. At Derya, we offer it to your liking: with meltingly tender lamb shank, flavorful minced meat, or juicy chicken, all served over a creamy purée of roasted, lightly smoked eggplant.

Enhanced with subtle seasoning, this rich and elegant dish evokes the grand feasts of the Ottoman palaces, where tradition meets generosity.
